Half Pig Shares
How does it work?
When buying a half pig share, you are purchasing a share of a live pig. You must pay a deposit to secure your share (roughly half the total cost). Until the pig is processed, we can only estimate it's weight. Once the pig is slaughtered, we can charge you the proper amount based on its final weight.
You have complete control over what cuts you receive. You decide what types of sausage, thickness of pork chops and bacon, types of roasts etc...
How much meat is in each share?
Each pig will vary in size and weight, but our average pig will be around 250 lbs when harvested. After it is slaughtered and cleaned, the "hanging weight" of each half should be around 90 lbs. This is what we base your price on at $7 per pound. Included in this weight are the less traditional (but still delicious!) parts, like the liver, heart, bones and head. It will be up to you whether you'd like to receive these oddments, but if you choose just the traditional commercial cuts our live 250 lb pig produces approximately 120 lbs of meat. Here is an example of how a half share might break down:
13 lbs of pork chops
3 lbs of spare ribs
10 lbs of sausage
15 lbs of ham
8 lbs of bacon
15 lbs of roasts
Offal, oddments, and lard available upon request.
All cuts are vacuum packed and fresh frozen.
Delivery
If you're in the Hudson Valley, we can work out a time and place for delivery of your share. If you're further away, drop us an email before you put down your deposit so that we can agree on a mutually convenient delivery.
How much will it cost?
As detailed above, we won't know the final cost of your share until the pig is processed. At $7 per pound of hanging weight, we estimate that a half share will cost around $630. Bulk ground sausage is included in this fee. If you'd like it made into links, it's an additional $4 per pound of sausage. Curing and smoking of bacon or ham is also an additional $4 per pound. To secure your share, we require a $250 deposit. Once the pig is processed and you have made all your decisions about sausage and bacon, we will invoice you for the remaining amount.
